Flourless Chocolate Banana Mini Muffins

I have been on a muffin kick lately and I recently discovered how delicious the combination of banana, chocolate and peanut butter is in muffins. This simple recipe from Averie Cooks is as delicious as it sounds and it’s so simple! Mine caved in a tiny bit and I had to add almond milk but no matter how they end up looking they did taste amazing! Flourless baking is hard to get used to and you have to tweak your baking senses, but it’s nice to have that option as wheat free flour is so expensive. I used an extra banana and a flax egg instead and they are yummy! I used half kraft and half natural peanut butter and I didn’t have a problem.
1 medium/large ripe banana, peeled
1 large egg
heaping 1/2 cup creamy peanut butter (I recommend using classic store bought peanut butter, and not natural or homemade because it can be oily or separate)
1/3 cup unsweetened natural cocoa powder
3 tablespoons honey (agave, brown rice syrup, or maple syrup may be substituted) [all I had was cane sugar]
1 tablespoon vanilla extract
1/4 teaspoon baking soda
pinch salt, optional and to taste
heaping 1/2 cup mini semi-sweet chocolate chips + more for sprinkling muffin tops
